Santoku Kitchen knife walnut This is a good strongThis Santoku has a brute de forge finish left from the forging process and is made from 80CRV2 high carbon steel. The rest of the blade has been hand sanded and acid etched to give a grey satin finish. The wa handle is on the shorter side which would suit someone with smaller hands and is made from dyed , stabilised burr ash with brass bolster and spacer.
