Thierry is a meticulous grower certified Biodynamic. This cuvee is made from grapes grown in a walled Clos called "L'Echelier". The vines are 70 years old and grown on truffeau (white limestone) and pure crystalline fruit is on full display here. Can sub this in for a dish that may call for white Burgundy.
