After manual harvesting, the bunches are selected and cooled with carbonic snow to prevent oxidation. Then the destemming takes place, following which part of the grapes undergoes fermentation to whole berries while the remaining part is subjected to soft crushing. It then passes to fermentation in stainless steel tanks
