Cavallotto, Barolo Riserva Vignolo, 2008 so080525 terre nere single vineyard offer and BourbonA mature, single cru Barolo Riserva from one of Piedmont's staunchest traditionalists, now drinking beautifully. Cavallotto has farmed at Castiglione Falletto for five generations, and Vignolo is a small, south west facing parcel of Nebbiolo that yielded just a few thousand bottles in 2008. The winemaking is classic to the core: native yeast fermentation, a month or more of maceration, and years of aging in large Slavonian oak botti before release.
